Cut the peeled beet into quarters. Using the bamix® with SliceSy®, cut thick slices of the beet. Add the beet slices and all the other ingredients to the beaker. Using the bamix® with the multi-purpose blade, blend until smooth. Enjoy cold and with a sprig of mint.
